Lentil Soup

Ingredients:
- 2 tbs Olive Oil
- 3 cups frozen chopped celery, carrot, onion, mix
- 1 tsp garlic powder or 2 minced garlic cloves
- 4 cups vegetable broth or chicken broth
- 1.5 cups of cooked lentils (brown or green)
- 1 can of diced tomatoes
- 3 cups of chopped kale
Instructions:
- In a large pan, combine olive oil and frozen
vegetables in a pan.
- Add in broth, garlic powder, and lentils
and bring to a boil.
- Combine with the can of tomatoes and stir.
- Turn off the heat and add in the kale. Serve and enjoy!
Variations:
- Add in any other types of vegetable or beans to create variety in this recipe.
- Use seasonal vegetables to get a different flavor each time.
- Experiment with different species if you have them like crushed red pepper, thyme, etc.
