Red Sauce & Veggie Pasta

Ingredients:
- 1 cup of uncooked noodles
- 1/2 zucchini, diced
- 1/2 cup of spinach, chopped
- 1/4 white onion, diced
- 1 can tomatoes
- 1 tsp oregano
- 1 tsp paprika
- 1 tsp garlic powder
- 1 tsp of oil
- salt and pepper to taste
Instructions:
- Boil water in a pot. Add pasta and cook for about 8 minutes until tender.
- Dice and chop the spinach, onions, and zucchini.
- Heat oil in a pan and add onions and zucchini and cook until soft.
- Add in tomatoes, spinach, and spices and stir together.
- Turn off the heat on the sauce and mix in your noodles. Enjoy!
Variations:
- Use whatever veggies you have on hand, including frozen veggies can be quick and easy too!
- This can be a great recipe to make extra for leftovers the next day!
- Ground beef or chicken could be added as well!
