Stuffed Veggie Sandwich

Serving Size: 1 sandwich
Ingredients:
- 2 slices grain bread, toasted if desired
- ¼ avocado, mashed or sliced
- 1 tablespoon hummus (any flavor desired)
- Pinch of salt
- 4 slices cucumber
- 2 slices tomato
- 2 tablespoons shredded carrots
Instructions:
- Toast bread if desired otherwise skip this step
- Spread one slice of bread with avocado and the other with hummus.
- Sprinkle with salt.
- Fill the sandwich with cucumber, tomato and carrot.
- Slice in half and serve with fruit or chips on side.
Variations:
- Feel free to explore with any types of hummus flavors or dips
- Add any additional veggies that you like or have in hand
- Have a side to go with your sandwich like the chips or fruit
