We are so excited to start off this spring semester with a delicious “Eat Your Heart Out” Valentine’s Day themed class. We have some sweet recipes including Spinach Pesto Pasta, Stuffed Strawberries and a Kale Caesar salad!

The Spinach Pesto Pasta includes bow tie pasta, pesto, spinach, lemon zest and tomatoes. Spinach is a nutrient-rich vegetable containing several vitamins such as potassium, magnesium, folic acid, iron and calcium. Pesto is also very nutritious because it contains vitamins A and C. Vitamin A plays an important role in the immune system and helps the heart, lungs and kidneys function properly and is excellent for eye health.

Our Stuffed Strawberries are absolutely delicious! This recipe contains cream cheese, fresh strawberries, vanilla, powdered sugar and graham crackers. Strawberries are rich in antioxidants, including vitamin C. Antioxidants help prevent free radicals from damaging the cells in your body and help us fight off cancer. Furthermore, Vitamin C is great for your body because it is vital in the production of collagen which helps maintain the skin’s elasticity.

Finally, we will be showing you how to make a Kale Caesar salad! This salad includes kale, Caesar salad dressing and walnuts. Kale is considered a superfood because it is nutrient dense, it’s rich in fiber and is also a great source of Vitamin C. In addition, it can help lower cholesterol which helps keep our hearts healthy!

We can’t wait to show you how to make these awesome recipes next Tuesday, February 4th! Cooking on Campus starts at 5:15 pm at Outdoor Rec. We hope to see you there!
