Better Your Breakfast Wrap Up

Welcome back Wildcats! We hope you had a fun and relaxing summer. Last Tuesday we kicked off our first class with breakfast for dinner with a healthy twist! We learned how to make energy bites, breakfast tacos, and yogurt parfaits with homemade granola.

We started off the class by making a homemade granola recipe! We combined pepitas (pumpkin seeds), oats, almonds, and cinnamon in a pan and cooked it for a few minutes. Next, we added the granola to a delicious yogurt parfait made with Greek yogurt, strawberries, and blueberries. Strawberries and blueberries are powerful antioxidants that strengthen the immune system and protect the body against illness and infection.  

    Next, Marleen showed us how to make our favorite version of energy bites! This recipe included old fashioned oats, creamy natural peanut butter, honey, coconut flakes, flaxseeds, dried cranberries, dark chocolate chips, and vanilla extract. One nice thing about this recipe is that an oven or microwave is NOT required! All you have to do is combine all of the ingredients in a bowl, mix it together, and then store them in the fridge for about 20 minutes!

Last, we learned how to make some amazing breakfast burritos that consisted of refried beans, Mexican style cheese, avocado, scrambled eggs, tortillas, and salsa! First, we heated up refried beans and scrambled eggs on the stove, then added sliced avocado. Did you know that avocados are a fantastic source of vitamins, minerals and fiber? Finally, we place all of these ingredients on the tortilla and learned how to properly wrap the perfect burrito.
