Spinach Quinoa Salad

Ingredients

½ cup dry quinoa

6 cups spinach, dry, chopped

1 sweet apples, cored and chopped

1 cup blueberries

1 cup walnuts, chopped

½ cup dried cranberries

4 oz. goat cheese, crumbled

Dressing

½ cup olive oil

1 lemon, juiced

2 tablespoons honey

1 ½ teaspoon Dijon mustard

Salt to taste
