​​Spooky season is here! We have all been waiting for this time of the year, and for us foodies it is extra special because we get to make some fun, themed treats and meals! Join us for a special class and learn how to make two perfect easy fall recipes to share with all of your friends!

 

When it comes to pumpkin we all think about baked goods, pumpkin spice lattes and sweets or a visit to the pumpkin patch, but there’s a whole new side to this bright orange vegetable, it’s creamy consistency is ideal for savory dishes too such as pasta and soups or stews! At COC we decided to make a creamy, comforting pumpkin pasta that will make you want to cozy up and watch your favorite fall movie. The star of the show, pumpkin is highly nutritious, particularly in vitamin A and C while also being low in calories (94% water). Its bright orange color comes from it being high in beta-carotene, your body converts it into vitamin A that protect and boost your eyesight. In addition, it is high in antioxidants which reduce your risk of cancer and chronic diseases. 

 

We use olive oil to cook the pasta, while also embracing all its benefits such as being rich in healthy monounsaturated fats, fighting inflammation and the risk of chronic diseases such as cancer, heart disease, metabolic syndrome, type 2 diabetes, Alzheimer’s, arthritis and even obesity. Heart health is also benefited by it protecting LDL bad cholesterol from oxidation, improving lining of your blood vessels and may prevent excessive blood clotting, as a result, it improves the function of blood vessels. 

 

To enhance the flavor of this creamy dish we use garlic cloves, it may help lower your blood pressure and cholesterol, support your immune system, reduce blood clotting and is rich in antioxidants. Now that we covered our savory dish, we are going to talk about sweets, because spooky season needs candy in the picture.

 

Peanut butter cups are everyone’s favorite, and they are surprisingly easy to make. These treats are loaded with peanut butter, which is satiating, high in protein, boosts heart health by having monounsaturated fatty acids (MUFAs), polyunsaturated fatty acids (PUFAs), niacin, magnesium, vitamin E, and manage blood sugars.
