Zucchini “Noodle” Salad

Ingredients

  • 1 zucchini
  • 1 yellow squash
  • 2 small tomatoes
  • ½ apple
  • 1 red bell pepper
  • 2 teaspoons olive oil
  • ½ lemon
  • 1 teaspoon Dijon mustard
  • 1 teaspoon fresh thyme, minced (or 2 teaspoon dried)
  • ¼ teaspoon ground black pepper
