Veggie Tacos

Ingredients

  • 8 corn tortillas or 4 whole-wheat tortillas
  • 1 medium zucchini 
  • 1 medium yellow squash
  • ½ yellow or red onion
  • 2 bell peppers (any color)
  • 2 cloves of garlic
  • 1 tablespoon olive oil 
  • 1 tablespoon cumin
  • 1 teaspoon chili powder
  • 2 tablespoons cilantro, chopped
  • toppings: salsa, lettuce, shredded cheese
