Southwest Quinoa Salad

Ingredients

  • 1 cup quinoa, uncooked
  • 1 ½ cups water
  • 2 medium tomatoes
  • ½ cucumber
  • ¼ bunch cilantro
  • 1 tablespoon almond slivers
  • ¼ cup raisins 
  • ½ teaspoon ground cumin
  • 2 tablespoons lime juice
  • ¼ teaspoon salt
  • ½ teaspoon ground black pepper
