Roasted Vegetable and Tofu Curry

Ingredients

  • cooking spray, as needed 
  • ½ head cauliflower, chopped
  • 1 med. yellow onion, diced
  • 2 red bell peppers, deseeded and diced
  • 1 eggplant, cubed
  • 12 oz. extra-firm tofu, cubed
  • 1 ½ cups water
  • 2 teaspoons ground cumin
  • 2 teaspoons ground turmeric
  • 1 teaspoon ground coriander
  • 1 teaspoon ground cardamom
  • ground cayenne, to taste
