Pumpkin Quinoa Bake

Ingredients

  • 1 medium ripe banana
  • 1 ¼ cups water
  • ½ cup of skim milk
  • 1 cup of pumpkin puree
  • ½ cup uncooked, rinsed quinoa 
  • 2 tablespoons maple syrup
  • 1 teaspoon vanilla extract
  • 1 teaspoon pumpkin pie spice
  • 1 teaspoon cinnamon 
  • ¼ cup raisins 
  • 2 tablespoons chopped pecans, walnuts, or almonds
