Migas (Tex-Mex Egg Scramble)

Ingredients

  • 3 large eggs
  • 2 tablespoons fat free milk or water
  • black pepper
  • 2 6” corn tortillas
  • ½ red bell pepper 
  • ½ cup asparagus spears
  • 1 small yellow onion
  • 1 clove garlic
  • ½ cup spinach, fresh
  • ½ cup non-fat grated cheddar cheese
  • cooking spray
