Marinated Tofu & Vegetable Stir-fry

Ingredients

  • 8oz extra-firm tofu
  • 1 tablespoon reduced-sodium soy sauce
  • 1 teaspoon rice vinegar
  • 1 teaspoon sesame oil
  • 1 clove garlic
  • ½ teaspoon ginger
  • ½ yellow onion
  • 1 red bell pepper
  • 1 cup mushrooms
  • 1 cup broccoli
  • 1 cup cooked brown rice
  • cooking spray, as needed
