Grilled Tofu with Fire Roasted Corn and Tomato Salsa

Ingredients

1 (14oz) package extra firm tofu

Marinade:

  •     ¼ cup lime juice
  •     1 tablespoon olive oil
  •     2 cloves garlic, minced
  •     2 teaspoons chili powder
  •    ¼ teaspoon cayenne pepper
  •     ¼ cup cilantro, finely chopped

Salsa:

  •      ½ red bell pepper, diced
  •      ½ red onion, minced
  •      ½ Serrano chili, minced
  •      6 cherry tomatoes, halved
  •      2 medium ears of corn
  •      2 tablespoons lime juice
  •      2 tablespoons cilantro, finely  chopped
  •         pinch of salt, to taste
