  • 3oz roasted red peppers
  • 2/3 cup yellow onion, diced
  • ¼ cup black olives, sliced
  • ¼ cup mushrooms, sliced
  • 1 clove garlic, minced
  • 1 (15oz) can low-sodium black-eyed peas, drained and rinsed
  • ¾ cup balsamic vinaigrette dressing
  • ¼ teaspoon black pepper
  • 10oz mixed salad greens
