Cucumber Greek Orzo

Ingredients

  • 2 cups orzo, uncooked
  • 1 cup red lentils, uncooked
  • 2 cucumbers 
  • 1 cups red onion, finely diced
  • 1 ½ cups curly leaf parsley, chopped
  • 5 tomatoes, diced 
  • ¼ cup light feta cheese 
  • ½ cup lemon juice 
  • 2 tablespoons olive oil
  • salt and pepper to taste
