Ingredients

  • 2-3 beets (yellow and/or red)
  • 2 fresh lemons
  • 1 tablespoon olive oil
  • ¼ head fennel, sliced as thin as possible
  • 2 cups arugula
  • ½ ounce goat cheese, crumbled
