Cider-Glazed Roasted Vegetables

Ingredients

  • 1 cup apple cider
  • ¼ cup molasses
  • ½ teaspoon cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 4 carrots, peeled and cut into 1” pieces
  • 5 parsnips, peeled, cored, and cut into 1” pieces
  • 1/3 cup chopped walnuts
  • 1/8 teaspoon ground cinnamon
  • 1 tablespoon parsley, minced
