Chicken and Shrimp Paella

Ingredients

  • 6oz skinless, boneless chicken breast    
  • 1 clove garlic, minced
  • 1 teaspoon paprika                                  
  •  1 tablespoon parsley, minced
  • ½ teaspoon dried oregano          
  • ½ cup uncooked brown minute rice
  • ½ teaspoon ground black pepper          
  • ¾ cup low sodium vegetable broth
  • ¼ yellow onion                                          
  • ¼ cup sweet peas
  • ½ red bell pepper                                    
  • 1 tomato                                                    
  • 4 shrimp, peeled and deveined
  • cooking spray, as needed
