Black Bean and Quinoa Chili

Ingredients

  • 1 cup uncooked quinoa
  • 1 yellow onion
  • 4 cloves garlic
  • 1 Serrano chili
  • 1 sweet potato (about 1.5lbs)
  • ¼ cup adobo sauce
  • 1 tablespoon canola oil
  • 1 tablespoon chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 (15oz) can crushed tomatoes, low sodium
  • 2 (15oz) cans black beans, low sodium
  • cooking spray
