BBQ Quinoa Salad

Ingredients

  • 1 cup uncooked quinoa
  • ¼ red onion (~ ½ cup)
  • 1 clove garlic 
  • ¼ cup cilantro 
  • 2 medium tomatoes 
  • 1 avocado
  • 1 (16oz) can low sodium black beans (drained and rinsed) 
  • ¼ cup defrosted corn or canned (drained and rinsed) 
  • Dressing:

¼ cup fat-free ranch dressing

2 tablespoons BBQ sauce
