Ingredients

  • 1 small or medium potato 
  • ¼ cup (1 oz.) shredded cheddar cheese
  • ¼ cup salsa
  • 2 tablespoons plain, nonfat Greek yogurt
  • 1 tablespoon diced green onion or chives, optional
  • salt and pepper, to taste
