Cooking on Campus

A hands on culinary crash course for college students!

  • This week our students became experts on superfoods and how they can use them in simple, and delicious ways! We prepared No-Bake Energy Bites, a Spinach and Quinoa Salad and a Fruit N’ Greens Smoothie. All are packed with nutrients and are easy to recreate in a dorm or apartment!

  • Last Tuesday night, our students learned how to make their own sushi! Although many of them had never made it before, everyone was a master by the end of the class. Along with the sushi, we also prepared Garlic and Ginger Edamame as well as a Crunchy Ramen Salad.

  • Have you ever wanted to make your own sushi but just never thought you could? Well you are in luck because here at Cooking on Campus we want everyone to learn how to create this dish themselves! Along with the Spicy Tofu Roll, our students will also be preparing Garlic Ginger Edamame and Crunchy Ramen Salad.

  •             The school year is almost over and what better way to celebrate than with a fiesta? Mexican Street Corn, Pineapple Guacamole, and a One Skillet Paella will make you feel like you are already on summer vacation!

  • This past Tuesday, our students learned how to prepare healthier versions of some of their favorite fast food treats! On the menu this week was savory Quinoa & Garbanzo Bean Veggie Burgers, Baked Sweet Potato Fries, and Skinny Cookies N Cream Milkshake.

  • Sometimes we reach a point where things get busy and we feel as if the only option is to go through the drive thru and grab the quickest and easiest thing on the menu. But have no fear! Our upcoming class, Fixing Fast Food, is all about beating those cravings with recipes that will not leave you feeling guilty!

  • Our mystery class is a favorite every semester and our latest one did not disappoint! Chef Lawrence and Registered Dietitian Nutritionist (RDN) Christine Carlson of the University of Arizona Student Union led our Cooking on Campus class and shared some of their tricks of the trade with us.

  • After our last class, our students are ready to prepare the perfect brunch menu!

Our class started off with Avocado Egg Boats. These are the perfect addition to any breakfast because they are filling and healthy! Avocados provide heart-healthy monounsaturated fats while the egg has protein, which will keep you full and satisfied. We garnished our egg boats with chives and parsley, but you can top yours with anything to give it the flavors you like!
