A hands on culinary crash course for college students!

A Taste of Travel

In our next class, we will take your taste buds on a journey around the world with three diverse recipes from countries around the globe:  Mexican Street Corn, Veggie Sushi Rolls, and Teriyaki Pineapple Tofu Skewers. 

We’ll begin by taking you to a land of spicy food and fiestas:  Mexico.  We’ll be making Mexican Street Corn—a grilled corn-cob coated with typical Mexican ingredients such as lime, cilantro, and chili.  Corn is a staple in the Mexican diet and has been used since ancient times as a base for many meals and has even served an important role in many religious ceremonies.  There’s a reason this grain is so highly acknowledged.  It serves many significant health functions—it is rich in vitamins, phytonutrients, and antioxidants which help ward off cancer-causing free radicals. 

Next, we will head to Japan, home of the sushi roll.  Sushi is a great way to incorporate veggies and fruit into your diet. Our recipe calls for healthy cucumbers, mangos, and avocados which contain the benefits of fiber and vitamins.  An entire mango meets over 100% of vitamin C needs. Vitamin C needs to be taken in daily to promote collagen production for healthy hair and skin.  Avocado is a fruit that contains a high amount of healthy fat called monounsaturated fat.  The fat in avocados also increases the absorption of fat-soluble vitamins (vitamins that require fat to be absorbed) in food it is eaten with. 

Last, we will travel to Hawaii, a land famous for its abundance of a tasty tropical treat:  pineapples.  We will be grilling up Tofu Pineapple Teriyaki Skewers.  Contrary to popular belief, the pineapple is not native to Hawaii!  It is actually native to Brazil.  However, pineapples thrive in the tropical climate of Hawaii and have become important in many Hawaiian dishes.  Pineapples are also a great source of vitamin C which supports healthy immune system function and the maintenance of strong bones.
