Let's Brunch Wrap Up

After our last class, our students are ready to prepare the perfect brunch menu!

            Our class started off with Avocado Egg Boats. These are the perfect addition to any breakfast because they are filling and healthy! Avocados provide heart-healthy monounsaturated fats while the egg has protein, which will keep you full and satisfied. We garnished our egg boats with chives and parsley, but you can top yours with anything to give it the flavors you like!

            Next, we moved onto our Zucchini and Sweet Potato Hash Browns. Crispy on the outside and soft on the inside, you will never know that these are not a classic hash brown recipe, other than the fact that this version tastes better! Both zucchini and sweet potato contain vitamin A, which is an excellent antioxidant and contributes to eye health.       

            Finally, we wrapped up our class on a sweet note with a Fruit and Granola Parfait. Our students topped calcium-rich Greek yogurt with fresh strawberries and blueberries just before finishing it off with crunchy granola. Yum! This is a perfect breakfast on its own and made an even better addition to the other delicious recipes we made in class.
