The school year is almost over and what better way to celebrate than with a fiesta? Mexican Street Corn, Pineapple Guacamole, and a One Skillet Paella will make you feel like you are already on summer vacation!
We will be starting off with grilled and juicy Mexican Street Corn topped with a creamy Greek yogurt spread and sprinkled with a flavorful spice mix. Corn contains fiber that is important for maintaining a healthy digestive system. The Greek yogurt provides a significant amount of protein as well as calcium and vitamin D. Lime juice is also featured in this recipe. Did you know that the high citric-acid content of lime juice can help prevent the formation of kidney stones? We will be cooking the corn on the grill which will bring out the sweet flavor of the corn without the addition of any sugar or fat.
Next, we will be making a One Skillet Paella and we really mean one skillet! This paella contains chicken and shrimp that are sautéed in a pan. Then we add rice, tomatoes and chicken broth once the meat is almost done cooking. We’ll finish this off with bright, sweet peas. This dish is the perfect way to feel as if you have travelled to Spain without leaving home! Shrimp contains an antioxidant called selenium which protects the body from infection!
Finally, our students will be preparing a Pineapple Guacamole. Not many people think about putting pineapples in their guacamole but the sweet flavor of the fruit cuts through some of the rich taste of the avocados. Not to mention, pineapple contains about half of the daily recommended value of vitamin C as well as containing manganese that helps to maintain healthy bones! Also, avocados contain healthy monounsaturated fats which help to reduce inflammation.
After our Final Fiesta class, our students will be prepared to host their own fiesta to celebrate the end of class! Join us on Tuesday, April 18th at 5:15 pm in the Outdoor Adventures building of the Rec center.
