Happy Valentine’s Day everyone! It is that time of year again which means it is time for our Cooking with Cupid class. We will be preparing some recipes that are perfect to share with that special someone.
First, we will be making Cauliflower-Crust Pizza Bites. These have all of the amazing flavors of pizza, without the excess carbohydrates normally found in the crust. This is so simple to make and the person you make it for will never know that the pizza they are used to eating just got a healthy and delicious makeover! We’re topping this cauliflower crust with robust marinara sauce, creamy mozzarella cheese and sweet, fresh basil. Cauliflower is a good source of fiber which helps maintain a healthy digestive system. It also has anti-inflammatory benefits, which helps prevent conditions like arthritis.
While those pizzas are in the oven, our students will be making a Strawberry Kiwi Spinach Salad with a Honey Balsamic Vinaigrette. This is the perfect side for the Cauliflower Pizza Bites but it is also delicious and filling enough to be the star of any meal! Crisp spring mix is topped with tart fruit and a light honey balsamic dressing. Kiwi and strawberries are the main components of this salad which contain vitamin C that helps protect the skin from damage that can be caused by the sun and/or air pollution.
Last, but certainly not least, we will be demonstrating how to make Cheesecake Stuffed Strawberries. This is a fun and delicious spin on a classic strawberry cheesecake. Sweet and plump strawberries are filled with a creamy, rich cream cheese center. This dessert is exceptionally easy and will be sure to impress anyone who is lucky enough to try it! These bite-sized treats are perfectly portioned, which helps control the amount of fat and calories consumed while still satisfying your Valentine’s Day sweet tooth.
